Red beans, also known as Azuki beans are used widely in Korean cuisine, in dishes such as steamed rice with red beans, red bean rice cake, rice cake balls with sweet red bean past filling (gyeongdan), sweet red bean soup (danpatjuk), sweet red bean porridge, and shaved ice with sweet red beans (patbingsu). The dried red beans are so hard that you will have to soak them in cold water for hours before using or boil and simmer until they get soft. When you make sweet red bean paste for sweet dessert, sugar is added. How to prepare the red beans is different by each recipe.
