I’ve just made my first kimchi, using Indonesian napa cabbage, and other local ingredients. I was worried about the hot pepper flakes, since it’s a bit different from korean hot pepper flakes. Especially the colour. For the kimchi paste, I used Maangchi’s emergency kimchi recipe.
Luckily, I made it not too salty..
Now I’m waiting for tomorrow.. ^^
