Kimchi Fried Rice

This is an easy yet delicious go to meal on lazy days. Fried rice makes good opportunity for a fridge purge. Best with ripe kimchi and leftover rice. Add more kimchi brine if u prefer a wet version, much like Chinese glutinous rice. I have tried adding leftover kimchi Jjjgae instead of the usual kimchi too. Draining off most of the stew soup, mixed the rice and ingredients in a non stick pan on high heat to create the crispy charred rice bits at the bottom of the pan. Exceptionally tasty when wrapped in seaweed. Yumz!
