I varied the recipe a bit, using some vinegared hot pepper paste and soy sauce for the fish sauce, since my daughter is vegetarian. I also cut the cucumbers into chunks instead of stuffing them whole.
They came out beautifully! Sweet, salty and a back of the throat heat toward the end that is amazing. Even the first day they are yummy … can’t wait to taste them after they’ve had a chance to “cook” a bit! Thank you, Maangchi!
