I’ve been making Maangchi’s kimchi for a couple of years now. I’ve taught quite a few Koreans how to make this too as I’ve not met many who know how to do it themselves! I always make a big batch of the spice mix and use it with just about everything else I cook – the umami levels in it are through the roof.
