8-10 cups of water, divided&#60;br /&#62;
1 tablespoon salt&#60;br /&#62;
1 large onion, sliced into quarters&#60;br /&#62;
6 cloves of garlic&#60;br /&#62;
2 inch piece of ginger, bruised&#60;br /&#62;
1-2 tablespoon of fish sauce&#60;br /&#62;
1 large bitter melon/gourd, seeded and sliced&#60;br /&#62;
2-3 green onions, sliced into 2 inch pieces&#60;/p&#62;
&#60;p&#62;In a medium-large size pot add rinsed pig feet and salt, and cover with 5 cups of water and set to boil over medium-high heat.  Boil for about 30-45 minutes. &#60;/p&#62;
&#60;p&#62;Drain boiling water and rinse pig feet again.  Cover with remaining 5 cups of water and add onion, garlic, ginger and fish sauce, and cook for 1 1/2 to 2 hours until pigs feet are tender.  &#60;/p&#62;
&#60;p&#62;Add bitter melon and cook for another 30 minutes.  Lastly taste and add more fish sauce if needed, and add green onion at last minute and stir all together.  Serve with rice and oisobagi or kimchi. &#60;/p&#62;
&#60;p&#62;^____^ **bitter melon is an acquired taste, it's not called bitter melon for no reason.  if you find it to be not to your liking you can substitue daikon or the korean radish, or pickled/fresh mustard greens.
