<description>&#60;p&#62;Greetings to all kimchi aficionados!&#60;/p&#62;
&#60;p&#62;I made kimchi last week, and it has been sitting in on my kitchen floor for three days. The problem is, it will NOT ferment! Any advice on how to kickstart the process?&#60;/p&#62;
&#60;p&#62;Some factors that might have messed up my batch:&#60;br /&#62;
1) I might have been too vigorous about rinsing out the salt from the kimchi. It's a touch bland&#60;br /&#62;
2) I used regular wheat flour and not rice flour&#60;br /&#62;
3) The kimchi brine (?) in the kimchi containers are not red and opaque-red, but kind of translucent-brown.&#60;/p&#62;

&#60;p&#62;I made the pickled radish kimchi and normally like the taste of fresh kimchi instead of the fermented kind that tastes sour. If I put the kimchi directly in the refrigerator after I make it, how long will it last. Do I have to ferment?&#60;/p&#62;

<description>&#60;p&#62;Hi all, I found Maangchi, because I am into fermentation and I saw her video on Kimchi. Well it was wonderful and by now my kitchen is full of things fermenting. I make Kombucha, Kefir, Beet Kvass, some of my own cheese and try and grow my own veg as far as possible.&#60;br /&#62;
I have adapted your Kaktugi recipe for my organic radishes out of the garden and it worked very well !Thank you so much for all your effort Maangchi ! I don't know where you get the time to be so personal on a site like this and on Youtube. &#60;/p&#62;
