<description>&#60;p&#62;I find that this soup can be fishy too if not prepared correctly, but if you follow Maangchi's recipe correctly, it should taste fine.  The most important thing is to put the bean sprouts in the pot along with cold water, put on the lid, and keep it closed throughout the boiling process until it is cooked.  If you dont cover it throughout the entire heating process, the soup tends to taste fishy.  Also, the roasted flavor of sesame does an excellent job of cutting fishiness, so its important to use well roasted and crushed sesame seeds as well as sesame oil.  Hope that helps!

&#60;p&#62;I have a question about the bean sprout soup recipe that Maangchi provided. I've never tried the bean sprout soup before (I think I definitely will next time I'm in a Korean place) but it looked delicious in Maangchi's video so I decided to give it a try. However, the smell of the dried anchovies was extremely pungent and permeated my whole kitchen. I thought it wouldn't really bother me in the soup, but somehow all I could taste in the soup was the fishy aftertaste (adding more hot pepper powder or salt didn't help of course). I only used less than a handful, so I don't think the amount was the problem. Is the fishy aftertaste normal and I'm just being picky about it or did I perhaps use the wrong sort of anchovies? (The package I used reads &#34;kibango anchovies&#34;, I'm assuming that's a brand). What do you guys say? Thank you for any help :)

maangchi asked me to post my take on this fish sauce substitute, hope you can make use of it. (:&#60;/p&#62;
&#60;p&#62;slice a medium-sized onion in half. add it to a pot with a kelp leaf about the size of your palm and some dried shiitake mushrooms in 2 cups cold water. turn off the heat once you bring the water to a boil. once it’s cooled down, strain the liquid into a container. you can throw away the onion and kelp, but definitely save the reconstituted mushrooms for another dish. add soy sauce to the liquid until it tastes as salty as fish sauce (meaning REALLY salty). if you don’t want the sauce to discolour your dish, use sea salt instead of soy sauce. &#60;/p&#62;
&#60;p&#62;if you want the 'fish sauce' to be gluten-free, just use sea salt or gluten-free soy sauce in place of regular soy sauce.

들깨 미역국[Deul-Kke-Mi-Yeok-Guk]&#60;br /&#62;
There is something special about seaweed soup in Korean culture for it is also known as a birthday soup, similar to a birthday cake as in western culture. And, normally a Korean birthday celebration would come with a family meal of seaweed soup and a more meaty dish like bulgogi, and maybe a cake.&#60;/p&#62;
&#60;p&#62;Last Saturday, it wasn&#38;#39;t anybody&#38;#39;s birthday but we got to have perilla seaweed soup for dinner, thanks to my aunt who came to visit and showed me how to make it. I had made seaweed soup several times before, but this was my first time making it, or any dish, with perilla seeds. Ground perilla seeds, when added to soup, seemed to play a magic and turned the soup into mustard colored, savory soup whose sweet smell lingers around as you dip your nose close to it. &#60;/p&#62;
&#60;p&#62;For 2 servings&#60;/p&#62;
&#60;p&#62;dry seaweeds (1/4 cup)&#60;br /&#62;
ground beef (1/4 cup)&#60;br /&#62;
water (4 cup)&#60;br /&#62;
Korean soy sauce (1 1/2 tbl)&#60;br /&#62;
sesame oil (1/2 tbl)&#60;br /&#62;
ground perilla seeds (3 tbl)&#60;br /&#62;
salt&#60;/p&#62;
&#60;p&#62;1.Soak dry seaweeds (1/4 cup) in water for 30 minutes. It will expand to fill over 1 cup.&#60;/p&#62;
&#60;p&#62;2.When the seaweeds are slithery and smooth, wash them thoroughly and drain.&#60;/p&#62;
&#60;p&#62;3.Chop beef (or use ground beef).&#60;/p&#62;
&#60;p&#62;4.On high heat, glaze pot with sesame oil and ground beef and soy sauce.(1 1/2 tbl).&#60;/p&#62;
&#60;p&#62;5.When the beef is cooked, add seaweeds.&#60;/p&#62;
&#60;p&#62;6.Mix in ground perilla seeds (3 tbl).&#60;/p&#62;
&#60;p&#62;7.Add water (4 cup), and on medium heat cook for 20-30 minutes. Season the soup with salt as needed.&#60;/p&#62;
