When my family was visiting Korea, I remember a rice cake that I've never been able to find since then. It was mildly sweet, somewhat sticky, and studded with raisins (if memory serves) throughout it. Please help me re-create this childhood memory.

Hi, Maangchi. Two years ago, I tried one kind of Korean rice cake, but I haven't known its name until now. It is white, blended with whole black beans, and lightly sweet. The top surface is cover by a layer of grounded sweet bean, or something similar. I remember that layer's color is chocolate or brown. Could you tell me its name and how to do it? Thank you very much :)

I think that gyungdan would be delicious and very appropriate for a 100 day celebration.

I have made the rainbow rice cake (mujigae ddeok) 3 times over the last 2 months and it is not really so hard to make. I think it is easier than making a double layer American cake with frosting from scratch. And it is just the right sweetness.

The white gyeongdan sounds great! It will be a big hit! Be sure to use the sweet red bean filling because many Koreans believe that the color from red beans will protect a baby from bad luck and will give good fortune and happiness.

Traditionally, rice cake made for a 100 days old birthday is supposed to be shared with many people to pray for the baby's longevity. Let me know how your grandbaby's 100th celebration goes and how people love your rice cake!

Hi, I'm writing so I can get a little feedback on whether or not my idea for a rice cake idea for my grandbaby's 100th day celebration might work. I'm new here, and I'm not Korean, but my grandbaby is half Korean. Her other grandma asked if I'd bring the cake for the celebration. I've researched high and low, which is how I stumbled upon this site. Making a cake style rice cake doesn't appear to be an easy task. However, those rice cake balls with the red bean filling look SO DELICIOUS! What I want to do is make those, use only white sesame seeds for the outer shell, maybe add powdered sugar so they'll be a little more white in color, and then arrange them on a plate so that when all is said and done they look like a tiered cake (you'll have to use your imagination a little to get the visual). Would that be appropriate and do you think it would work?

So, I want to make some new and different rice cakes (Gyungdan). I live in Korea so I get the standard ones a lot... I want to add an international touch to them.

I've tried:
a peanut butter+powdered sugar mix (to make it less sticky) rolled in blended peanuts

a chocolate frosting like mixture rolled in coco powder + powdered sugar (but these didn't turn out well, the chocolate was too runny and the coco didn't absorb the water from the cooking process so they stayed sticky)

I am going to try a creamy cheese filling, but I'm not sure what to put with it... nuts? honey? I was thinking something with a touch of lemon or lemon zest, or what about ginger?

Anyone else have any other ideas? I've thought about trying savory rice cakes (something spicy?) but I don't think Koreans would like them because rice cakes are supposed to be sweet...

Thanks for your help!

I made this with a Korean recipe online since no one knows how.
I thought I would share my results.

I bought frozen rice flour like what Maangchi used in her video for three colored rice cake.
I used the little green squash that looks like the acron squash..but flatter.
This was my first time making it, so I basically winged it.
I used some sugar, I didn't measure, probably about 1/4th cup. It didn't turn out as sweet as I liked (Not sweet at all) so you can add more sugar.
I washed and scraped out the seeds of the squash, then steamed it until soft. Spooned out the insides and set it into a bowl..
I think you'll only need about half of a good sized one.
I used too much and my flour became too hard to sift through.
I thought at this point I didnd't need extra water, but the recipe I used called for two table spoons. I recommend adding the water after the squash and rubbing them with your hands. Then once more in the sifter, straight into the spring form pan. I steamed for about 20 minutes, more than the recipe called for (10 minutes).
Since this was my first attempt it came out decent.
Like I said, I used too much squash and lessed the water..I think that's why mine came out a bit dry on the bottom.
I'll try this again and post a more accurate recipe if anyone wants.

What you need-

Frozen Rice Flour
Sugar
Water
Salt
Squash/pumpkin
A steamer, and a pan of some sort.

This is from Aeriskitchen.com (another great website source for korean recipes:

"For steaming, filled almost half of a pan with water and boil it on high.

Meanwhile, combine 3 cups of rice flour and 1 tsp of salt.

Slowly add 1½ cups of water and stir it gently.

The rice flour will be crumbly.

Prepare a wet cheesecloth. Place the cheese cloth in a steamer.

Add the rice flour on top of the cheesecloth.

Once the water starts to boil, steam the rice flour for about 20 minutes on high.

In a bowl, add 1½ cups of cold water and 1 tsp of sesame oil. If you don’t like sesame oil, you can use normal cooking oil instead.

After 20 minutes, the rice flour will be cooked.

Wear gloves before placing plastic gloves over your hands to help prevent burning your hands. The dough will be hot!

Use a bread machine to knead the dough. I used the pizza dough setting for 25 minutes. It is very important to knead the dough thoroughly for the gluten to fully develop and become sticky, so I do not recommend taking any shortcuts with this step. =P

If you don’t have a bread machine, you can make the sticky rice cakes with 1½ cups of rice flour and 1½ cups of sweet rice flour instead of 3 cups of rice flour. Hand-knead the dough for at about 10 minutes. Since hand-kneading is not good enough to make a good texture for the sticky rice cakes, the sweet rice flour can be used to cheat a little. It will give the rice cakes extra gluten, but as I already mentioned, these results are not as good as using a bread machine.

When you handle the dough, put some of the oil and water on your hands and the board, so that the dough will not stick to things.Take some of the dough and round it. Roll it on a board with your hands until it becomes about half an inch in diameter.

Cut it into 2 inch pieces. This is for tteokbokki or tteokggochi."

Here's the website for the recipe (so you can watch the video and see how everything should look):
http://aeriskitchen.com/2010/04/homemade-sticy-rice-cakes-for-tteokbokki-and-tteokguk/#more-4509

I used to be able to get various types of dduhk and many other delicious korean food when i lived in NJ, but now that I am in Manhattan, I am much more limited. I looked for it online and tried different spellings (sool dduk, sul dduhk, sool dug) but could not find a recipe.

If you know, can you please post recipe?
Thanks!

Hi all, this is a english translation of it.

Maangchi, do u think that it is suitable to use as dduk in duuk bok ki?

# How to make Super Simple ricecake!!
1. Put grinded sticky rice and sweet soda (like Sprite) together into a bowl and stir them about 1 minute. Add a little salt.
2. After wrapping the dough, make several holes with toothpick. (otherwise, it would explode)
3. Put it into a microwave and operate it for 3~4 min. The dough would be completed.
4. Remove the wrap, put some sesame oil on your hands (or using disposable gloves), make a shape into a small piece, or as u want, and cover the rice cake with soybean crumbles.

Hi,

I have been passing by Your website many times and I am so happy that I found your website..thanks for all the recipies ..

I registered today only to give you this recipe..how to make dduk from scratch..

However, I only have the Korean version of it now. I asked a friend of mine to translate it.. i will post it in short.
anyway, i figured Maanchi You are korean and could be in use of this recipe...
