Bibim Naengmyeon homemade noodles?

Hello, I’ve been doing a lot of reading about bibim naengmyeon and my fiancee is very picky about the noodles and getting the dish perfect overall. I really want to make it for her, but I want to be able to make it just as good as the restaurants in Shenyang, China.
So I read that bibim naegnmyeon needs very special noodles. Not just Japanese soba noodles, but they are different. I want to know where I can learn how to make the noodles by hand or find high quality noodles to use when I cook her bibim naengmyeon to surprise her!
I think there is a little difference between South Korean bibim naengmyeon and North korean, and maybe even Chinese-korean bibim naengmyeon is different, too. I’m not really sure what to look for. If anyone can help I would really appreciate it! I know getting bibim naengmyeon right is very important for people that love those noodles.
Edit: The reason I say Shenyang is because that is the only place I have tasted bibim naengmyeon.
