      I absolutely LOVE your site!! I spent 4 years in Korea and I miss it very much. I met my husband there, so Korea has a very special place in my heart.

      I love Korean food and always have to go to restaurants when I have a craving. Now, because of your site, I can make everything I enjoy at home! Yours, by far, is the best Korean cooking site on the net.

      I noticed your “OI Kimchi” is a full sized cucumber. Whenever I had it in Korea, it was sliced. I have never seen it stuffed.

      Do you have a recipe for OI Kimchi that is sliced or chopped or is it the same?

      The sliced cucumber with seasoning that you mention is called “oimuchim”(오이무침). You met your lovely husband in Korea! I totally understand how you feel about Korea. 4 years of living in Korea is quite a long period. You probably miss so many things about Korea now.

      I lived in Korea for 2 years and by far my favorite side dish was OIMUCHIM. Have you posted the video recipe for 오이무침 yet?

      No I haven’t. oimuchim(cucumber side dish) is one of my requested side dishes.

      I will post the video recipe for it someday.

      Slice cucumber and put it in a bowl and set it aside

      make seasoning sauce by mixing soy sauce, hot pepper flakes, sugar, chopped green onion, minced garlic, sesame oil, and roasted sesame seeds.

      Add the sauce to the cucumber and mix it right before serving.

      Can you make it?

      Hi Maangchi – Have you posted the video for this yet? I had some at a Korean restaurant the other night and want to make it! I saw in another one of your posts about NangMyung how someone uses the very similar sauce on top of the noodles for their oimuchim. That is how the oimuchim tasted to me at the restaurant.. like the sauce typically on BiBimNangmyung.
