We had a very similar experience with home grown radishes here in Florida, my Korean daughter-in-law felt the hot Florida sun might have toughened up the radishes. We however have had good luck with radishes bought from the Korean store. Sorry I couldn't be more helpful as I can only venture a guess at this point.

I have made yeolmu kimchi and chonggak kimchi with both store bought and homegrown radishes. Many of the leaves are too tough to chew even after I trim of many outer leaves. At first I think the taste is good, but then I cannot really eat it. Has this happened to you? What can you suggest to me?
