I have never eaten Gopchang jeongol but I love Lao style tripe soup and American southern style chitterlings so I am sure I would like Gopchang jeongol. I have found cow intestines for sale at my local Asian market so please Maangchi, have mercy on your hardcore followers and post a recipe. We already love you but we will love you even more.

No one’s replied… So here’s my recipe:
You need:
cow intestine and tripe (Clean them)
Carrots, sliced
onions, sliced
green onions, sliced,
korean squash, sliced
(lots)ginger, sliced
garlic, chopped
flank steak
gochujang
crushed red peppers
Instructions:
Clean the intestines and tripe by removing the fats. Wash them with salt (lots of it). Wash it with water.
After cleaning the intestines and tripe, cut them in to large pieces (they shrink to half their size). Boil them separately with lots of ginger. Boil the tripe for like 3 minutes and the intestines for 5 minutes. Take them out and throw away the ginger.
Boil the flank steak. Take out the brown stuff that comes out. Once the water colors, lower the heat and simmer. After about 5-10 minutes, take out the flank steak. Turn up the heat. Add the intestines. Boil for 5 minutes. Add the gochujang and crushed red pepper. Mix it all around so the water is now a deep red. Add the vegetables and tripe. Let it boil for 5 minutes. Add noodles last minute.
