Once I get my kimchi home and open the jar, it seems like the liquid dries up and the fermentation stops. Is my fridge too cold? How do I keep the fermentation going?
It seems you might have to leave it a bit longer. Typically, the fermentation causes more brine to be produced so you should be seeing more liquid as it ferments more. Are you lids screwed on tightly? If not, it could be drying out from low humidity in your fridge.
