I’m enjoying my lunch of last night’s dinner leftovers. This is a good example of why I love Korean cooking and how it has changed my life: I bought a pound of squid, half body, half tentacles. I’m still new to squid and this was only my second time using it. I had planned on using it for either Spicy Squid Stir Fry or Seafood Scallion Pancakes (which I had made the first time I tried cooking squid). I ran short on cooking time and improvised: I cut up all the squid except for about half of the tentacles, stir fried it in olive oil and soy sauce, added pre-cooked stir-fried veggies and small amount of beef in sauce (the leftovers of my husband’s dinner), and served it over rice with a generous squirt of sauce from Maangchi’s Fried Chicken. It was pretty good! I breaded and fried the remaining squid and the chicken wings leftover from Maangchi’s Fried Chicken. It’s a win-win-win-win situation: Made a new dinner successfully, used all of the squid I had purchased, used the leftover chicken wings up, and used the Fried Chicken sauce as a condiment. Actually, I had made a double batch of the sauce and bottled it for use as a condiment. My husband has been using it on EVERYTHING! I’ve struggled with meal planning I felt confident about and have found it in Korean cooking, thanks to Maangchi!
