      Hi Maangchi! I’m a 25 year old male from california. I’ve prepared kimchi before by following your recipe, it was a success! But this time when I prepared it, it was very last minute I was up until 3 am preparing kimchi. My question is how do I or CAN I correct the flavors of the kimchi? It came out very bland. :( If it can be helped i would appreciate it if not thank you anyways!

      Hi Quiet!
      What do you mean by bland? Not spicy enough? Not salty? Or not enough flavor?

      Whatever the reason, it’s easy to fix. If its not spicy or flavorful enough, add more kimchi paste. If it’s not salty enough, add more salt.

      I’m sure you’ll make better kimchi next time. Good luck!

        Hi maangchi her i am again sorry for so many question even i searched many ways i just want to ask to the expert for sure.i made kimchi enough sour but i think its bland and not so spicy…so i added tps of salt and sugar…but later on it doesn’t spicy anymore how can i fix it i made 10pound and i dont want to waste it.and also i put it in the freezer for about 30mins-1hour but all kimchi is pack with box and thin plastic bag.plus another thick plastic for kimchi before i put it in the plastuc box.pls help me i really want to fix it.ty very much i hope this time you will answer me again.ty

      Hi quiet,

      If you did not leave it at room temperature long enough it does not achieve the “sour” characteristic which greatly enhances all the flavors in your kimchi.

      Gray Kunz in his book Elements of Taste speaks about flavors that pull and push and sour is one of them.

      If I remember I’ll post reply with the paragraph about sour.

      Hi Maangchi,

      I made Kimchi for the 1st time using your vegetarian recipe! I tried to follow along with a small batch using 1 napa cabbage. I kept some outside the fridge and remaining in the fridge but they’re both so bland, it makes me sad. It’s not spicy enough and a little bitter and there’s a lot of water sitting at the bottom too. How can I save this batch of kimchi? Please help!
