Apologies for the poor directions…dinner was prepared by an experienced cook (my wife) and recorded by an inexperienced food blogger and "scullery maid" (me). ^^

– Spicy Curry Batter fried Tilapia with Spicy Tartar Sauce
– Coleslaw with Ginger Lemongrass dressing
– Roasted AsparagusSpicy Curry Batter fried Tilapia
– 2 x 1lb bags frozen tilapia filets
– batter 1
– 3/4 cup ladu besan (chick pea) flour
– 3 Tbsp hot curry powder
– batter 2
– 3/4 cup Ladu Besan (chick pea) flour
– 3 Tbsp Chana Masala (Indian spice)
– egg wash
– 2 eggs
– 1/2 Tbsp minced Serrano peppers
– 1/2 Tbsp minced jalapeno peppersAfter defrosting, pat fish dry
Dredge in batter 1, egg then batter 2
Pan frySpicy Tartar Sauce
– 3 Tbsp mayonnaise
– 2 Tsp dill relish
– 4 Tbs garlic powder
– juice from 1/2 lemon
– zest from 1/2 lemon
– 1/2 Tbsp minced Serrano peppers
– 1/2 Tbsp minced jalapeno peppersChop peppers
Put all ingredients in a bowl and mix gently but thoroughlyColeslaw with Ginger Lemongrass dressing
– Bag-o-coleslaw
– "Ginger Lemongrass dressing" from "The Joy of Cooking" pg 575Roasted Asparagus
– Vegetable oil (canola)Spritz with vegetable oil
Roast in oven
Sprinkle w/Kosher salt (to your taste) just before serving[attachment=9584,761]
