Hello, I have made my first batch of tongbaechu-kimchi!
Apart from not being able to cut the napa cabbage in exact quarters :-) I think I managed to do it.
A couple of days after I had stored it in the fridge, I realized that the kimchi brine had frozen. Now I have moved it to an upper shelf, so that the temperature is maybe 1 or 2 °C warmer, but could anyone tell me if the kimchi is spoiled?
I don’t think so, but I’m not sure. Thanks! - January 24, 2016 at 6:14 pm #66357LynnjaminParticipant
Sometimes some of the brine will freeze a bit, but its okay. Just let it thaw out and it will keep doing its thing. It happens to me all the time in my tiny mini fridge that I use for fermenting. Just think! Your kimchi went through what traditional kimchi surely experienced often during the centuries when it was stored outdoors in the bitter cold :)

Thanks to both of you for your replies :-)
Yes, it is still ok and I’m glad I succeeded. Hours watching Maangchi’s kimchi videos were not spent in vain! - February 13, 2016 at 5:40 am #66713Whyee EssParticipant
1~2 degrees looks fine.
In fact, there is a Kimchi frigde that specially designed to store kimchi And its target temperature is it 0 degrees in C so 1 to 2 looks okay..
If you want to make kimchi “aged”(or ripe..?), keep it in 4 degrees. If your kimchi becomes so sour, try for a kimchi pancakes.(김치전 kimchi jeon)
