Hi there.
I made my first kimchi last saturday. I did everything like the recipe, but left out the shrimps and raddish as I didn’t find any. After 2-3 days when I thought there were bubbles in the kimchi, I put it in the fridge.
Now 5 days later I tasted it for the first time: The white hard leaf part tastes how kimchi should taste I think. But the green soft part of the leaf tastes super tart and bitter and fizzy and I’m afraid I did something wrong? Should it ferment longer maybe?Or did I check it too often? During the first three days I checked it two times to see if there were bubbles already.
There is not much juice in the container as well. Only a third of the kimchi is submerged under the juice.

I think you need to give it more time. It sounds like your kimchi is in the “crazy” stage between raw and ripe. You might notice how Maangchi eats her kimchi a little bit right away and then lets the some become “really well fermented”. Give it a few weeks and try it again. Tell us how it turns out. :)
