Kimchi without gochugaru

      Here in Romania, gochugaru is very hard to find and usually very expensive..but we do have a variety of paprika that is easy to find and cheap. Could I use that instead of gochugaru?

      I know that it won’t be traditional kimchi but wouldn’t it be kind of the same, just different taste? Like the fermentation has more to do with the salt and fishsauce than anything else, right?

      What do you think of my idea of trying different pepper flakes, am I committing a grave sin?

      That’s absolutely OK!
      Use medium-hot flakes – without seeds if possible.
      If the flakes you get aren’t hot at all: Just add some ground hot chili peppers, the capsaicin will find its way. ;-).
      Are they salted? If so, you just have to adjust the general amount of salt you use.
