Hello Maangchi, I am curious about the differences between hot pepper flakes and hot pepper powder. There is only hot pepper powder selling in korean supermarket. What should I do if only can find hot pepper powder and I want to follow your recipe?
Many of the bags of pepper flakes i see say “powder” but if they have a clear spot on the bags some are really flakes. Look for bags that have picture of kimchi on them.
Also, if the package says Red Pepper Powder and you see the word Course, that’s the one you want. If it says Fine, that will be more like American chili powder. I bought it once by accident. It made fine kimchi by the way. Just harder to measure properly and a little different flavor. But still tasty.
Try this one if you can find it. Cost is around $4/lb and they are no overly spicy. Very good for more than just kimchi too.
