I’ve been trying to find out if Korean hot pepper paste ever spoils. I bought a big tub of it from a Korean market about 6 or 8 months ago and I’ve only used it once. When I was creating a recipe with mussels and other seafood ingredients, I added the hot pepper paste and it tasted sour like it was spoiled. So I quickly scooped as much out of the pan and hoped that my kids and myself would not get sick. I hate to throw that big tub out if it can be salvaged. So how long can it last in the refrigerator?
Not sure of the shelf life, but keeping opened bags in the freezer extends it. I wouldn’t but so much that you wouldn’t use it within a year. I’d think in a freezer, 12 months should be doable.
You might be better off buying smaller bags. (1 lb) If I go to the international food store, they have small and large bags, but I’d never use a large bag in a year.
