Years ago I recall seeing a dish in the NYT. I believe it was made with a pork butt that was marinated and cooked whole by indirect heat on a barbecue grill. I know there are some dishes where the meat is sliced thin and then cut but are there any where a whole or half pork butt is cooked?
Thanks
Probably not many traditional recipes that slow cook a whole pork butt.
I like to use a combination of pepper paste, mirin, honey or brown sugar mixed with a onion and garlic puree on BBQ or smoked pork butt.
I marinade first for 24-48 hours in mirin, black pepper and ginger. Ginger ale or sprite is good too for an easy marinade.
I did this one with pork loin but i like pork butt or pork shoulder better. Loin is too lean and will turn out dry if not careful.
This was a pork butt i did with a different rub
Made a pork bbq dish. It is so salty it is not edible. How can it be rescued?
