Hi Maangchi and everyone !
Gochugaru or korean hot pepper flakes is so expensive in my place. I always use local pepper flakes to make my own kimchi.
But now, it’s so hard to find the red pepper flakes in my place. They sell pepper flakes but the color is a little bit orange. I don’t like the orange one. CAN I USE FRESH CHILI PEPPER TO MAKE KIMCHI ?
Buy your own gochu seeds and grow them.

You certainly can ferment fresh chili peppers. I would remove the seeds and puree them if used for kimchi. Make your porridge with the puree or just add a little of the puree to the wilted cabbage.
I have never done it but i do ferment peppers for hot sauce.
It taste different if u use chili powder. Personally, i don’t like it. The kimchi turned out spicy and for me not as tasty as compared to original Maangchi’s recipe.
