My favorite korean restaurant has a wide variety of banchan, some cycle through depending on the day of the week, but one they always have is one that I can’t seem to identify.
It’s definitely a vegetable (identifiable from the crunch), and it’s always been served in a mayonnaise based sauce with a few chives. They’re noodle-like but seem to be whole pieces, not cut or shredded. They’re about 1-2 inches long depending on the piece. I originally thought it was a sea vegetable, since they have a round cross-section like a succulent, but I can’t find anything that matches that description.
It’s one of my favorite side dishes and I’d love to make it at home, but I can’t figure out what it is! Help?

Huh, I can’t seem to upload a doodle I did, I’ll try one more time.
If it doesn’t upload: The vegetable seems to be white and somewhat translucent (like a sprout, but with no bean or leaf), they’re tapered at both ends, they’re pretty thin (less than half a centimeter), and don’t seem fibrous.

must be seaweed noodle salad.. made from kelp
