    What is Shin Kimchi? What do you use it for? Any Recipes?



    Shin kimchi is just fermented kimchi (fermented longer than usual until it is really pungent). You can use it in kimchi chigae among other things.


    Yes, shin kimchi is great for kimchi chigae as Soju123 said. Anyhow, shin kimchi is kimchi that has gone sour. It has a tartier taste than regular kimchi.
