I have a question that needs an answer as soon as possible. Could I use squid that I just bought from the market, salted, and put in the freezer for an hour the same day I make the kimchi instead of waiting a week to use it?
You could try it out but you will have to wait to eat your kimchi until it ferments. When your kimchi ferments, the squid will ferment, too.
