I have had Korean side dishes that include something like sliced radishes but they were sweet. In my searches I’ve easily found spicy cubed radish kimchi. Does anyone know if a kimchi with radish that is sweet? Also, are there shredded radish kimchi that are sweet as well?

Sure
Musaengchae and Danmjui.
The musaengchae is slightly spicy and slightly sweet with some “tang” of vinegar.
I make a danmuji copy using a common sweet pickle brine and a little tumeric for color. Its very very simple and tastes similar too.
I also make a sweet pickled cabbage with the same sweet pickle brine. Its actually closer to Chinese or Japanses sweet pickled cabbage but it goes great with spicy Korean dishes too.
They is also White Kimchi which gets its sweetness from pear. This one is a bit more complicated to make but delicious.
