Can I use Chinese cabbage as substitute for Napa cabbage?
I found Korean radish (they’re not very long, though) in my local grocery store. Can I use those instead of daikon?
Lastly, can I insert radish pieces between the cabbage to make both cabbage kimchi and radish kimchi?

Ive made lots of Kimchi with Taiwanese cabbage. Make sure you pick one that is nice and dense. It should feel very firm and heavy.
Ive also made kimchi with baby bok choy and i think its delicious.
Use any radish you like but i do prefer Korean radish or daikon. Just mix it in with the cabbage when you add the other ingredients.

Hi,
Napa cabbage is the same thing as Chinese cabbage, the’re just 2 tifferent names.
Using Korean radish and daikon has almost no difference. If you have both, i think it’s better to use Korean radish.
There already is thinly sliced (julliened) radish in tongbaechu kimchi but if you want to make radish kimchi at the same time,I think Maangchi has made an video for that 8 years ago. Chinese cabbage (Brassica rapa, subspecies pekinensis and chinensis) can refer to two groups of Chinese leaf vegetables often used in Chinese cuisine: the Pekinensis Group (napa cabbage) and the Chinensis Group (bok choy).
Both answers are correct but ive always called bok choy Chinese cabbage.
