Hi Maangchi,
I learned to cook from my italian mom and grandmother, and they cooked a lot of different greens. One of my favorites is broccoli rabe or rapini. I am pretty sure the Korean name for this is yuchae. I have cooked it with both your collard greens and spinach recipes, but I was wondering if you are familiar with this vegetable and have any traditional Korean recipes that use it?
Kamsahamnida!
Also, I believe the common ways to prepare yuchae banchan:
Bok choy seasoned with soybean paste (Cheonggyeongchae doenjang-muchim)
I don’t think yuchae is broccoli rabe. Yuchae is Brassica napus, or Yu choy in Chinese.
