"Hey Maangchi, thank you for this variation! I've always used your soy based wet marinade, but it never turned out like the restaurant. I've never seen a galbi recipe done this way, looking forward to trying it. About cutting: I find it difficult to cut short ribs this way, but I don't like LA cut because of the bones, so when I make them at home I cut the ribs a third way. Get some nice cuts like what you have here, but remove the bone entirely, then slice into thin pieces (perpendicular to the way the bone ran). Definitely not as pretty, but it saves a lot of work and I don't get my kitchen scissors dirty. So, if some other readers are looking for a little easier way..."
