"I live in northern New Mexico, very low humidity. My meju also were not growing mold. They developed a nice funky smell after hanging for awhile but that went away also. I read NOMA fermentation guide and they say 86 degrees fahrenheit and 75 percent humidity is optimum for growing aspergillus mold, so, I put a plate in the bottom of a large crock pot, meju on the plate along with hay, and I poured in a shot glass of water every day so it goes to the bottom and doesn't wet the meju directly. Lid on, of course. A week in and I have patches of white and green mold! Sharing this for those who also live in desert-like areas and can't get their meju to go moldy."
