Mixed two Maangchi recipes together and replaced chicken with cauliflower for my vefetarisn friends. Worked well….next time will make pieces a bit smaller and try to bake in hot oven after frying or just bake them.

Maangchi,
Another option is to use Soy Curls instead of chicken. You can purchase Soy Curls online (or in a brick and mortar store if you can find them) or make them yourself (DIY), which I do. The DIY process is really simple. It took a number of tries to develop the recipe, and a few batches ended up in the garbage can before I got it right, but the results are worth it.
Keep safe, and thanks for all your wonderful recipes.

Thank you jel,
I’d like to try it out someday!
What a great idea to use cauliflower instead of chicken! The cauliflower almost looks like chicken. If someone asks you what’s the name of this dish in Korean, you can say, “it’s cauliflower gangjeong!” : )
