Three dishes from Maangchi! I cooked all three ahead of time over the weekend, and will be having slowly across this week with my partner (we both have busy work days and it is difficult to cook during the week). Today was the first meal and they all tasted great (thank you to Maangchi)!
1. Spicy stir-fried pork and kimchi (Dwaeji-kimchi duruchigi: 돼지김치 두루치기) (I made it less spicy for my partner)
2. Korean rolled omelette (Gyeran-mari: 계란말이)
3. Spinach side dish (Sigeumchi-namul: 시금치나물)
The rice I cooked is mixed with a special herb given to me by my Korean friend’s family, which they have said is native to their region (they also gave me instructions to prepare it! I am very grateful) The herb is called gondurae (곤드레), and after soaking the dried herb, boiling, washing, it is mixed with minced garlic, perilla oil (들기름) and salt before being cooked together with rice. The rice had a nice herby and refreshing aftertaste that complemented the saucy kimchi pork really well.
