I have to admit it has been at least 2 decades since I made kimchi due to a busy lifestyle. After watching Maangchi’s interview on Google Talk, she inspired me to go back to my roots and experience the love of traditional Korean home cooking. I did modify the recipe to 2 moderate sized napa cabbage and added only 1 cup of red pepper flakes. The sauce was perfect for my cabbages. When eaten right away it was pretty spicy, however, after 3 days the spice toned down making it perfect to eat (even for my Greek husband! :-)) Thank you so much for sharing your passion, Maangchi!!! Looking forward to making more easy and delicious recipes ;-)
