Mak Kimchi (막김치)

1 of 2 containers of fresh Mak Kimchi (막김치). I substituted 1/2 cup of kosher salted shrimp for the squid and 1 1/2 cups of buchu for the leeks. Also added 1 1/2 cups of watercress.
