My first batch of Kimchi

I first tried Kimchi when I was 18, I am now 48 years young. My friends mother is Korean and was always making the most incredible foods in her kitchen. All of our other friends would never try anything and would say it’s too stinky. Not me! The very first taste of Kimchi had me hooked. Crunchy,spicy,saucy, and vibrantly colored, it made me crave more and more of the delicious vegetable symphony. Once a week I would stop by her home and she would have a container ready for me and sometimes invite me to sit for some sticky rice and freshly made Kkatdugi and Gimbap. I eventually moved and lost touch with that saint of a woman but never lost my intense love of Kimchi and all foods Korean, I fed my Kimchi addiction by buying the jarred stuff you find in grocery, but it just wasn’t the same at all. I finally decided enough was enough and I was going to try and make my own from scratch. I looked at several websites with photos and recipes and none of them seed like Mrs. Savastas perfection from my past. Then I found you Maangchi! Your video tutorial was fun and knowledgeable and I knew I had to give it a go. My first ever Kimchi came out stunning and delicious and very much like what I had missed all these years. Thank you for sharing your recipes with us and for helping me find something I thought I had lost forever.
P.S. I even grow my own Daikon, leeks,garlic, and green onion now…Napa will be grown next year.
