Vegan Kkaenip-jeon (Perilla Leaves Pancakes)

I remember very well when you uploaded this awesome recipe. You told us vegetarians to he creative when it came to this dish. So I took the challenge and made it even vegan! And guess what, I made my boyfriend addicted to these pancakes.

When it came to the party, I mixed some tempeh (instead of meat), scallions, onion and garlic together with some sugar, soy sauce, sesame oil and perilla oil (you just have to try it, it’s awesome!). And then instead of eggs I used a substitute made of chickpea flour, potato starch, cassava starch, amaranth flour, baking powder, nutritional yeast, black salt (for the eggy taste), turmeric and water. It may sound like a lot, but I pre-made the mixture long time ago.

I would like to thank you so much for this recipe! I enjoyed every single bite, together with some dipping sauce, rice and kimchi! :-)
