Easy braised beef short ribs

Makgalbi-jjim 막갈비찜

Galbijjim is a popular Korean  dish made with beef short ribs and it’s considered an unskippable  dish on special occasions in Korea. I uploaded my traditional galbijjim video a long time ago, in 2008! This is a newer version that I developed that’s very easy, simple, and quick to make. It’s very juicy, tender, and sweet.

Serves 2-3

Cooking time: about 1½ hours


  • 2 pounds of beef short ribs, trimmed of excess fat. Score them down to the bone a few times. Rinse, soak in cold water, and drain.
  • 1 large onion (1½ cups’ worth), pureed
  • 6-8 garlic cloves, minced
  • 2 bosc pears (about 1½ cups’ worth), peeled, cored, and pureed
  • 2 ts worth of ginger, minced
  • 3 tbs soy sauce
  • 1 tbs brown sugar
  • ½ ts ground black pepper
  • 1 ts toasted sesame oil
  • 1 tbs toasted toasted sesame seeds
  • green peas and pine nuts for garnish (optional)



  1. Blanch the ribs in boiling water for 5 minutes. Rinse them in cold water and drain.

  2. Put the ribs in a heavy bottomed pot. Add onion, garlic, ginger, brown sugar, pears, soy sauce,  ground black pepper, and 1 cup of water.
  3. Cover and cook over medium heat for 30 minutes.
  4. Give it a good stir and turn down the heat. Cover and simmer for 20 minutes.
  5. Open the lid and turn up the heat. Keep stirring and cooking until the ribs turn shiny and the juice is almost gone.
  6. Add green peas for color (optional) and transfer to a serving plate. Sprinkle with toasted sesame seeds and pine nuts.

Serve with rice, kimchi, soup, and more side dishes if you want.

    Can I make the galbijim using short rib without the bone? If so, is there anything I need to adjust in the ingredients or cooking method?

    Hi Maangchi! I’m wondering if you have a recipe for spicy garlic braised pork ribs? It uses pear too, and the sauce looks red like kimchi/gochujang. I saw a short clip of it on What Shall We Eat Today and is dying to find out how to cook it. You’re my go-to for Korean recipes so your site was my first stop. Tried googling for it but found nothing too. Do you have the Korean name for that dish?

      Hi Maangchi.. I eventually used the available pork spare rib at home.. And i substitute the green peas with green onion.. And i add some chili pepper to give a kick hehehe.. Thanks for the great recipe, Maangchi ^^

    hello maangchi. gonna try this tomorrow. i just wonder if it this okay to use any kind of pears. available pears in my place have light yellow color. can’t find “bosc”. will this be just fine?     Hello Maangchi

    I watched your video and made this dish this evening, I used all the ingredients apart from the sesame seeds and followed your instructions to the letter and we ended up with a bland dish, very little taste, I cooked it for myself and 2 friends, before I passed a comment I asked my friends what they thought (they are used to my cooking) of the dish , they both said disappointed as it had vey little flavour, nothing like my normal standard.
    I will try another of your dishes and let you know how turns.

    Quick question if I use double the meat do I have to use double the other ingredients to make the sauce?

    Mahalo for sharing this onolicous recipe! I made it tonight and it came out wonderful. However here in Guam the supermarkets slice the Beef short ribs 1/4 inch thick.

      Aloha Maangchi, Finally bought some 1-inch cut beef short ribs and it was even better! I have tried other recipes but your recipe is perfect and simple. If I wanted to make the ribs even more tender could I add 2 cups of water to the puree sauce? Mahalo!

    hello maangchi.. can i put some carrots in here too? because i wanted to make this for my daughter’s birthday party too.. if i put some carrots,won’t it affect the taste? bcos i think that i should put more colors to it aside from frozen peas.. please help.. thank you..

    Maangchi is it possible to use boneless short ribs? It’s the only option in my area. Oh and I make your Kimchi once a week. Good stuff.

    Looks so delicious! I will have to go get some short ribs and make this recipe. This one is so much easier to make. The other older recipe is good too.         Maangchi I made the recipe and I forgot to take pictures. Everyone all just started eating and when I started eating I completely forgot to take the pictures!!! :(

        But the recipe was so delicious! I made your Korean lettuce salad and I had made some oisobagi and I a simple soup with sea plant and tofu. It was so good. Maangchi I used just 1 bosc pear because my cousin ate my other pear but I substituted it with 2 kiwis and it was just as delicious ans so tender. :D

          Don’t worry about the photos. “Everyone all just started eating and when I started eating I completely forgot to take the pictures!!” lol, you are not alone! It always happens to me, too. You substituted 1 bosc pear with 2 kiwis, yes, smart! You can use sweet and soft peach, too.

    Maangchi ! I just cooked this for dinner tonight , super easy and it was very tasty ! Delicious , my husband loves it and he said ” it’s DA BOMB ” LOL .. Nick loves it too , in fact he was watching your youtube video making this . I replaced beef ribs with pork ribs , and didn’t use peas but just sprinkled green onions and sesame seed . Thanks for this easy and delicious recipe !
