Wheat or soy?
There are wheat-free soy-sauces available.
If soy is the reason, you may try fish-sauce (very salty!) instead.
Or glutamate. If the latter is the problem – well, just leave it and use a little more salt (preferably sea~) and/or some seaweed instead. With fresh ingredients, it will taste different, bust still delicious!
