I had a similar situation. I made pony tail kimchi that I made a month ago. The top layer had a white-ish tint. I removed it and the rest tasted fine but the kimchi had some gritty texture on my hands when I was working with it. I was making braised kimchi rolls. I’ve never handled kimchi before so I’m not sure if the grainyness was wrong.
