A sweet, spicy, sour, salty meat (or vegetarian) stir fry?

I was thinking, hungry now (hehe), of a Korean-inspired recipe almost like a muchim with chicken, beef or pork that could be pan fried or braised with delicious sauce. The sauce could be a sauce a little sticky and shiny, with sweet, sour, salty, and a little earthy flavors. Would these ingredients work? Perhaps a combination of:
Sesame oil, gochugaru and/or gochujang, ginger, garlic, soy sauce, Korean pear and onion for sweetness and tenderness as a marinade, white or apple vinegar for sour flavor, shiitake mushroom for earthy flavor, and toasted sesame seed and sliced green onion for garnish.
I’ve never used these ingredients together with any protein besides my tofu, cubed or sliced, and then pan fried. I would imagine it would be just as tasty with another protein like chicken, beef, pork, or even mushrooms for vegetarian version.
