I’m looking for non-pickled side-dishes that can be stored up to one week in the fridge. Any suggestions?

Stored properly, I never had a problems with the side-dishes I made.
Of course, the dry ones keep best (like Maangchi suggested); would you consider a jangajji pickled? Some definitely are, of course; but not all.
Prepared roots keep quite well (i.e. doraji, Deodeok(더덕) [Codonopsis lanceolata] and lotus roots),
even dishes made from dried Shiitake mushrooms (Pyogo-buseot 표고버섯).Bye, Sanne.

Braised burdock root is one of my favorite nonfermented sides. Ive seen it served hot but im fond of it cold. The recipe is very similar to braised lotus root. The cooking technique is slightly different.
