Hi Maangchi,
I followed your youtube n made my 1st attempt of Kimchi today and I m currently very anticipated for them to ripe. I was wondering if I could separate my Kimchi into smaller containers after 24 hours of fermentation or not? Personally, i prefer my kimchi to be more sourish. However, as I’ve made 2 mistakes :
1. Overpacked my kimchi in one container, leaving no room for extra juice to bubble during fermentation (I guess)
2. Overpacked my kimchi into big container which would risk my batch of kimchi to more exposure of Oxigen if i am to open and close to take out bits of kimchi daily.
Please kindly advise me if i could :
I. Transfer my overpacked kimchi into smaller containers and let them continue to ferment until it reaches the sourish i desired at room temperature before i actually put inside my fridge for further fermentation?
II. How long do i have to keep inside my fridge so that my kimchi would be ready to be eaten best?
