Hi, I made a batch of Danmuji from a single daikon with turmeric instead of gardenia sealed in ziplock bag with lots of free space but I always try to push the air out before closing. A curious thing. After more than a month at 39°F (4°C) during which it barely did anything noticeable it started filling the bag with gas which I have to release every day – not a tiny bit but like half a litre of gas a day. Before this build up I repeatedly opened the bag and ate a bit but majority is still in there. Is this remotely normal? Is it a sign of unwanted bacteria? Is it safe to eat?
