      Hi Maangchi!

      Galbitang is becoming super popular in Irvine, CA. There are many restaurants dedicated to making the best Galbitang in the city!

      These restaurants always serve their Galbitang with a dipping sauce. They call it a pickled mustard sauce. From what I can tell, it’s kind of sweet, salty and spicy. The ingredients that I can see are: sliced Jalapenos and sliced Korean Radish. The liquid part of the sauce is kind of sticky, and tastes like there is mustard oil, sesame oil, and maybe some soy sauce or something. Please see the picture I uploaded from the restaurant — the sauce is the one on the bottom left corner.

      So I have two questions:
      (1) What is this sauce called in Korean?
      (2) Do you have a recipe for this sauce?

      I also tweeted this question to you a while ago — hopefully you can answer! I think it really makes Galbitang even more delicious!

      I LOVE galbitang. I grew up in Irvine and I have tried all the restaurants in the area that serve Galbitang. If you haven’t tried Shik Do Rak’s galbitang yet, you should try it!! It’s the cleanest and best tasting galbitang I have tried and they have some of the best banchan in the business. Shik Do Rak is in the shopping center on Walnut and Jeffrey, across the street from 99 Ranch Market.
