      Many years ago, as part of a meal’s banchan, I was served a cucumber dish that looked as if the cucumbers had been dumped in a pile of fireplace soot… the flesh was greyish black and rather unappetizing looking, but the taste was amazing… a tiny bit salty, sweet (as if pears or apples had been used in the preparation) and sour (perhaps fermented.) I’m never seen the dish since, though it’s not for lack of looking. Please tell me what this is called and make a video about its preparation.) Kam sa ni da!!
