This dish is easy, buy not very light. If you want to indulge yourself in a rich and full flavour you can give this a go:
For 2 persons:
250 grams Tagliatelle (preferred fresh)
200 grams of pork bacon cubes
100 grams of white mushrooms
1 smal jar of red pesto (or make your own)
125 ml. crème fraîche
fresh basil
1 smal bag of parmezan cheese
2 cloves of garlic
olive oil
Instructions:
Boil the pasta as described on the package.
Heat a few drops of olive oil in a pan and bake the bacon cubes untill well done with the mushrooms and the garlic.
(Get rid of the fat that was released)
In a bowl, mix the crème fraîche and the cheese and add the bacon and mushrooms.
Heat this in a pan on low heat.
Add the red pesto and add the pasta.
Shred some basil over the dish.
Now it’s done, serve with a green salad and some freshly baked ciabatta bread for dipping the sauce away. A sparkling white wine goes great with this dish.

Hi Reinier!
What is red pesto? We are used to green pesto made from basil leaves, parmesan cheese and pine nuts all ground together.

Hi Pure_Hapa,
The process is the same, just add sun dried tomatoes (on oil) and it will be great.
Oh, i forgot, you can also add roasted pine nuts to the dish when it’s done.
