      I’ve been a big fan of Maangchi’s ever since discovering her on YouTube a few years ago. I have both cookbooks. Things I really enjoy about the website/cookbooks/recipes:

      – many of the recipes can be made using just a few ingredients (like scallions, soy sauce, toasted sesame seeds, red pepper flakes, sesame oil) that are pretty easy to find.

      – Maangchi gives a whole range of recipes, from dishes that are quick and easy to long, involved ones like for making your own doenjang or gochujang.

      – lots of the recipes are either vegetarian, or have vegetarian options.

      Some of my favorite recipes:

      Spicy soft tofu stew (Soondubu-jigae).
      Fried gochujang (Yak-gochujang)
      Scallion salad (Pa muchim)
      Scallion pancake (Pajeon)
      Kimchi pancake (Kimchijeon)
      Spicy braised tofu (Dubu-jorim)
      Many of the kimchi recipes. I’ve made the vegetarian version with napa, a vegetarian version with bok choy, and the cubed radish kimchi (kkakdugi).

      I’m lucky enough to live close to an H Mart (Korean supermarket) so I’ve been able to find almost all the ingredients required, including the mountain vegetables like aster scaber, fernbrake and bellflower root.
