How long does it take Kimchi to ripen?

Hey guys,
This is my first time making kimchi and I kept it out for 36 hours before keeping it in the fridge. I was wondering how long it takes kimchi to ripen and get sour in the fridge.

It depends on ingredients such as how much salt and kinds of sugars used. 36 hours though is not much time for Lacto B. to get a good start before going in the fridge.
I do not put mine in the fridge until i can smell the lactic acid which is normally 2-3 days but i use a little juice from a previous ferment too. Sometimes i use a little pear to help it get going.
High salt, no starter and no added sugars may take a long time in the fridge. It may even mold before the ph gets too low for mold.
Thank you for replying. I really like the taste of sour kimchi and I guess I just have to give it a little bit more time.
